Vegan Raffaello & Bounty Chocolate CoConut Bliss Balls

Vegan Raffaello & Bounty Chocolate Coconut Bliss Balls Overview

The familiar taste of Raffaello balls revisited, now in a vegan and a much healthier version. These chocolate coconut bliss balls are so simple to make. I cannot believe I haven’t made them earlier! They are an ideal dessert if you’ve got a sweet tooth (like me) but want to keep things on a healthier side. Looking so pretty, these bliss balls would make a nice little edible present or potluck addition. Or, you can always keep them for yourself, stored away in a fridge in an air-tight container.

Ingredients for these Raffaello balls are considered to be low GI foods, therefore they should not cause blood sugar spikes (as store-bought sweets usually would). This means that they would also keep you fuller and not leave you craving for more and more sweets.

Ingredients

  • 100 g coconut flakes + some more to cover the raffaello balls
  • 150 g coconut cream top of refrigerated coconut milk can + 2 tbsp coconut milk/cream (for chocolate cover)
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 25 g vegan dark chocolate or chocolate chips
  • 10-20 hazelnuts/almonds optional

Instructions

  • Mix coconut flakes, coconut cream, maple syrup, and vanilla extract. Make sure the consistency is solid (add more coconut flakes if too moist or coconut cream if too dry).
  • Roll bliss balls and push a hazelnut into the middle of the ball (optional, can be replaced to almond or skipped altogether).
  • Melt dark chocolate/chocolate chips in a microwave or on the stovetop, stir in the coconut milk.
  • Place part of coconut bliss balls onto a tray covered with parchment paper or a plate and cover with liquid chocolate. Top with some coconut flakes, if desired.
  • Roll the rest of the bliss balls in coconut flakes, making sure they are well-coated. Place next to the chocolate-coated balls and refrigerate for an hour (quick fix is to place them into the freezer for 15 mins instead).
