- 1 cup coconut oil
- 1/2 cup soy milk unsweetened
- 4 Tbsp extra virgin olive oil
- 2 tsp apple cider vinegar
- 2 tsp nutritional yeast
- 1 tsp salt
Melt the coconut oil, if solid.
Mix the soy milk, apple cider vinegar and salt and set aside for 10 minutes.
Into a blender, pour the milk mixture, coconut and olive oil, and nutrional yeast.
Blend on high speed for about 1-2 minutes until smooth.
Pour the mixture into molds and freeze for at least an hour.
Keep the butter refrigerated for a solid consistency.
