Ingredients

  • 3 cup rolled oats
  • 1 cup raw almonds lightly sliced
  • 1 tsp cinnamon
  • 2 tbsp coconut flakes/coconut chips
  • 1/2 cup coconut oil melted
  • 2 tbsp peanut butter
  • 3 tbsp agave/maple syrup
  • 1 cup dates blended to paste
  • optional: dried fruits, chocolate, more nuts, etc.

Instructions

  • Preheat oven on 180 C.
  • Mix oats, almonds, coconut flakes, and 1/2 cup melted coconut oil in a large bowl.
  • Place the mix onto a baking sheet and roast in the oven for 15 minutes till lightly golden. 
  • In a saucepan heat up peanut butter, syrup and coconut oil together, till all melted and smooth.
  • Next mix dry ingredients and sauce in a bowl, break the processed dates and place the mix with the rest, add any extra ingredients you wish to add (in my case that is sesame seeds and dried cranberries). 
  • Place all into a form covered with baking paper and press thoroughly to make sure all ingredients stick together. Refrigerate for an hour approximately, then take the sheet out of the form, cut into bars and enjoy your snack! 
  • You can keep oat bars refrigerated for 4 days, otherwise, you can freeze them to be able to enjoy for a longer time.
