This Teriyaki Veggie Stir Fry is a great meal when you crave for an Asian-like food. It is very easy to prepare and can be easily varied!

Ingredients
1tbspcoconut oil
1onionsliced
1carrotsliced
2cloves of garlicsliced
40gfresh gingergrated
100ggreen beans
4largemushroomssliced
1mediumbell peppersliced
50gpeanutscrushed
100gsoy meatoptional, cooked from dry
1green onionsliced
3tbspteriyaki sauce
200gglass noodles
1/4tspcayenne powderor to taste
Instructions
Heat oil in a pan and start with frying onion over medium heat for a couple of minutes, until translucent. Add carrots and cover with a lid. Let cook for 5 minutes.
Next, add in garlic, ginger and cayenne powder and cook for a couple of minutes.
Throw in the rest of veggies (except green onions) as well as prepared soy chunks and cook until soft.
Meanwhile soak your glass noodles in hot water in a separate bowl (or if your noodles require to be boiled, follow the instructions on the package).
Once veggies are ready, add your teriyaki sauce and let the flavors combine, while cooking for another minute.
Stir in cooked glass noodles. Serve topped with crushed peanuts and sliced green onions.
