This Teriyaki Veggie Stir Fry is one of those dishes you can put together from basically any produce you got at hand. Focusing on essentials that are onions, garlic, ginger, glass noodles, and teriyaki sauce, along with your favorite veggies, you will definitely get a great result.

This is one of favorite my go-to recipes whenever I’m into something quick and exotically flavorful. I’m in love with how simple it is to make and how different are these flavors from my usual daily variety of tastes.

To make this stir fry, just cook the veggies of your choice with teriyaki sauce and add in cooked glass noodles. As simple as that.

Glass noodles are an incredibly handy product to keep at hand. They are super quick to prepare (3-6 minutes in boiling water), tough to spoil and fit well in Asian-like stir-fries. Glass noodles are considered a complex carb. Therefore they could be a better source of energy than the simple carbs from, say, white rice or pasta.

This recipe includes soy meat (also known as textured vegetable protein) for extra texture and protein. Alternatively, instead of soy meat, you may add extra beans to elevate protein content. Some crushed unsalted roasted peanuts will give the meal a nice crunch.

Ingredients

  • 1 tbsp coconut oil
  • 1 onion sliced
  • 1 carrot sliced
  • 2 cloves of garlic sliced
  • 40 g fresh ginger grated
  • 100 g green beans
  • 4 large mushrooms sliced
  • 1 medium bell pepper sliced
  • 50 g peanuts crushed
  • 100 g soy meat optional, cooked from dry
  • 1 green onion sliced
  • 3 tbsp teriyaki sauce
  • 200 g glass noodles
  • 1/4 tsp cayenne powder or to taste

Instructions

  • Heat oil in a pan and start with frying onion over medium heat for a couple of minutes, until translucent. Add carrots and cover with a lid. Let cook for 5 minutes.
  • Next, add in garlic, ginger and cayenne powder and cook for a couple of minutes.
  • Throw in the rest of veggies (except green onions) as well as prepared soy chunks and cook until soft.
  • Meanwhile soak your glass noodles in hot water in a separate bowl (or if your noodles require to be boiled, follow the instructions on the package).
  • Once veggies are ready, add your teriyaki sauce and let the flavors combine, while cooking for another minute. 
  • Stir in cooked glass noodles. Serve topped with crushed peanuts and sliced green onions.
