Made from simple, easily available ingredients, this Vegan Butter recipe will surprise you with the familiar taste and texture of conventional butter. It only takes 6 simple ingredients: olive oil, coconut oil, nutritional yeast, apple cider vinegar, and salt, making this vegan butter recipe very budget-friendly. To make your own butter at home, you will just need to mix the ingredients in a blender and freeze them in ice molds or small containers for a couple of hours.
Needless to say, vegan butter is a product high in fats and calories, at the same time being low in nutrients. Coconut oil is high in saturated fats and may negatively impact cholesterol levels in the body. At the same time, olive oil, besides being high in omega-6, can contribute greatly to vitamin E intake. It is important to consider how oils may impact the body before deciding to remove or include them in the diet. Overall, vegan butter, and vegetable oils in general, may still be a part of a balanced plant-based diet, if consumed sparingly.
This Vegan Butter is best kept in the refrigarator for a solid consistency. Refrigerated butter will last for quite some time. However, if not planning to consume within week, I would advise to keep it in the freezer, where it would last even longer (easily for a month and more).
Serving vegan butter over a slice of freshly toasted brean would make it melt, as you would expect from conventional butter. It’ll make a great base for sandwiches.
