( I could bet these ingredients to be found in 99% of vegan households). Accessibility of these components makes it easy to bake these  Banana Oat Pancakes without much prior preparation.

If you happen to have a waffle maker in your kitchen and would like to have waffles instead, this recipe could also be used to make waffle dough. You may only need to add a bit more oats to the batter for more thickness.

I love these pancakes served with nuts and nut butter (almond butter is one of my favorites), fruits, and some maple syrup on top. Jam is another good topping idea. Bon appetit!

Ingredients

  • 1 1/2 cup oats
  • 1 banana mashed
  • 2 tsp baking powder
  • 1 cup water/plant milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract to taste
  • 3/4 tsp cinnamon to taste
  • 1/4 tsp sea salt

Instructions

  • Mash banana (can be done in a blender) - the riper banana is, the sweeter the pancakes.
  • To the blender add oats and the rest of the ingredients, blend well until smooth.
  • Heat a pan and if your pan is not specific pancake pan, add some oil for a non-stick surface.  
  • Scoop some batter (approximately 1/4 cup) for each pancake, forming circles (or any other shape you prefer). 
  • Fry your pancakes over low-medium heat for several minutes on each side - once golden-brown, it is time to turn the pancake to the other side.
  • Serve with your favorite toppings: fruits, nuts, nut butter or/and maple syrup.
