I absolutely love pancakes! In my country, they are even considered a traditional national dish, and we have a holiday when pancakes are the main dish. We make sweet and sour stuffed pancakes, fluffy pancakes topped with dressing or jam, thin pancakes that resemble the sun, and many more. One could say the sky is the limit when it comes to improvising with pancakes.
But let us stick to one type of pancake at a time. (I promise to come up with more going forward). We got here simple fluffy pancakes made from oats and banana. ( I could bet these ingredients to be found in 99% of vegan households). Accessibility of these components makes it easy to bake these Banana Oat Pancakes without much prior preparation.
If you happen to have a waffle maker in your kitchen and would like to have waffles instead, this recipe could also be used to make waffle dough. You may only need to add a bit more oats to the batter for more thickness.
I love these pancakes served with nuts and nut butter (almond butter is one of my favorites), fruits, and some maple syrup on top. Jam is another good topping idea. Bon appetit!
