Occasionally, I feel nostalgic for cutlets I used to have so often for a meal in my childhood. These Crunchy Vegan Lentil Burger Patties is one of the recipes I turn to satisfy this nostalgic craving.

With a juicy texture inside, thanks to soaked uncooked lentils, crunchy cover, and flavorful taste, these plant-based cutlets stand out from the range of other recipes in my eyes (or mouth :P).

These patties are very quick to make out of simple ingredients. Many of those are likely to be readily available. The only condition to be pre-planned is soaking lentils (for a couple of hours or overnight) before cooking.

This recipe allows you to batch, make patties, and freeze excess so that you can have access to a quick meal at any time.

Very simplistic, these Crunchy Vegan Lentil Burger Patties will surprise you with how flavorful and aromatic they are. Nutmeg plays a significant role in such flavoring, so whenever possible, try not to skip it from the process.

These Lentil Patties are very nutritious. Four patties will get you around 20g of protein, a similar amount of fiber, 8g of iron (over half of the advised daily value for women, and close to recommended daily value for men) with less than 400 calories.

Ingredients

  • 1 1/2 cup lentils soaked from dry
  • 1 cup rice cooked from dry
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg ground
  • 1 large onion diced
  • 2 garlic cloves minced

Instructions

  • Take pre-soaked overnight (or at least for a couple of hours) lentils, drain the water and rinse. Blend slightly in a blender or food processor. 
  • Dice the onion and mince the garlic, add to blended lentils and blend once again. 
  • Place lentil mix into a large bowl and add rice (general rule here is to have 3/4 portions of rice to 1 portion of lentils). Combine with spices and mix well. Add a bit more rice if the mix is too moist and doesn't form patties.
  • Once desired consistency reached, form patties and fry in a pan (will take approx 5 mins on each side) or bake in the oven for oil-free option (around 15 mins on each side) until crunchy.
  • If you happen to have residual uncooked patties (and this recipe accounts for that), freeze them placing patties on a board or a plate covering with a bag/kitchen cloth into a freezer. To prepare from frozen, preliminary defrost in a microwave and then cook as described above.
