Crunchy Homemade Granola

This Crunchy Homemade Granola is my ultimate and favorite go-to breakfast. It’s nice and crunchy, quick to put together and (almost) always available in my pantry.

This granola is also multi-purpose. it goes well with plant milk or yogurt, smoothie bowl or as a topping to a fruit. That said, it’s just as good for breakfast as for snacks. And all that achieved in a quick process of throw-in oats and any nuts and seeds that you have at your disposal.

I still remember the times when everybody around me was talking about homemade granola. And I loved the idea of it, but it just sounded too much of a hassle to me. If I only knew back then that the process can be so straightforward, I would wait no longer.

So if you are anything like me back then and are terrified of complexity, but love the idea of granola – look no more. This recipe is super-simple and will not take more than half an hour. Moreover, you can easily improvise with what you’ve got at home. You can make this homemade granola your way, using this recipe as a base.

My favorite way to serve this Crunchy Homemade Granola is with plant-based plain yogurt and ripe fruits. I absolutely love how various favors of roasted seeds, nuts, and oats combine with the smoothness of yogurt and sweetness of fruits.

Ingredients

  • 500 g dry oats use Gluten-Free oats for GF option
  • 1/2 cup coconut oil melted
  • 1/4 cup maple syrup
  • 1 tsp ground cinnamon
  • 2 tbsp coconut flakes/chips
  • 50 g walnuts/hazelnuts/almonds
  • 50 g pumpkin seeds optional
  • 50 g sunflower seeds optional
  • 25 g chia seeds optional

Instructions

  • Mix melted coconut oil and maple syrup together in a small bowl/cup.
  • Take a bigger bowl, place oats and mix in coconut oil and syrup, spread evenly.
  • Add ground cinnamon, place on a baking tray and roast in the oven at 175 C (350 F) for 15 mins or more for desired roast intensity (make sure to stir oats approximately every 5 mins to make sure they are roasted evenly). 
  • Take the tray out of the oven, add your nuts and seeds of choice to the mix (you can slice nuts to smaller pieces). 
  • Place the tray back into the oven for another 5-10 mins to give nuts and seeds a slight roast as well. 
  • Once ready, take the tray out and finally let your ready granola cool down before placing it into a jar or container to store for up to a week. You can also add dried fruits to the mix (e.g. cranberries).
  • Serve with a portion of plant-based yogurt or milk or with a smoothie bowl, topping up (optionally) with fresh fruits.
